Zucchini Carrot Pineapple cake
2 c flour
2 tsp cinnamon
2 tsp soda
1/2 tsp nutmeg
1/2 tsp salt
3 eggs
1 cup brown sugar
1 cup applesauce
1/2 cup milk + 1 Tbsp vinegar added to milk
1 1/2 tsp vanilla
8 oz crushed pineapple in juice
2 cups grated carrots
1 cup grated zucchini, peel included
Preheat oven to 350 degrees
Grease and flour a 13"x9" pan
Mix all dry ingredients (first five) Optional add: 1/2 cup raisins and 1/2 chopped walnuts.
Beat eggs well, slowly beat in sugar, then applesauce, then the milk which has the vinegar in it and then the vanilla.
Stir in dry ingredients DO NOT OVERMIX
Stir in pinapple, carrots, zucchini
Bake 40 mins or longer till done, cool
Cream Cheese Icing
1 pkg cream cheese ( 8oz), softened to room temp
1/2 cup butter, softened to room temp
2 tsp orange rind
4 cups icing sugar
2 tsps vanilla
